Santos & Java (not)!?

This name is like a disease to specialty or third wave coffee in some respects, as Santos is a port and also the name of commodity coffee from Brazil  and well Java…well there’s little or no coffee grown there these days so an obsolete name at best then?

So my version of this well walked path is upside down! We have put together a coffee that is a blend of Fazenda Samambaia yellow bourbon, from Henrique Cambrai and also 33.333% Triple picked Sumatra Mandheling. When you could buy the commodity version of this, years ago, to hide the unevenness of the coffees they were just “West-Coast!” as we affectionately refer to the dark and oily roasty coffee.

Our version of this “non-personal-old favourite” is really chocolaty from the safety of the Samambaia and then the subtlety of savoury gunpowder and spice actually make this a really nice shot and also milk based drink. In a word balance!. This is simple, pleasing, yet not dirty, wild or nasty or super unbalanced as you might expect from so many Indonesian coffees.

Fabulous
Delicious rich chocolate right from the off moving in to a slightly salty and savoury taste. In the description in says "gunmetal" and I just couldn't imagine it. However, after a while you do get a slightly metalic, yet pleasing aftertaste, like caps in a childs gun. Pours beautifully and has a rich dark crema.... love it
